Title

Nutritional and Microbiological Characteristics of Commercial Chicken Balls and Fish Balls from Hpa-an Township, Kayin State

Abstract

The aim of this research is to study the chemical composition of chicken balls and fish balls from Hpa-an Township. Chicken balls and fish balls are one of the constituent in our diet as it includes nutritional values. These samples will be collected from Hpa-an Township in Kayin State.pH value were be determined by pH meter. Nutritional characterization (moisture, ash, protein, fat, total titratiable actidity and minerals, etc.,) of chicken balls and fish balls were be determined. Microbiological properties (Fungi and bacteria) were also be investigated. Some mineral elements will be carried out by atomic absorption spectrophotometer. The chemical composition of samples were be determined by Association of the Official Analytical Chemist (AOAC) method and modern instrumental techniques. This research work will be benefit for the consumers’ health information about the nutrition values.
